Ingredients

1 lb sirloin or ribeye steak – Choose a tender cut like sirloin or ribeye for the best texture. Ribeye gives you a bit more richness, while sirloin is leaner but still full of flavor.

2 tablespoons olive oil – This helps sear the steak bites to perfection, giving them that golden, crispy exterior.

1 teaspoon garlic powder – Adds an aromatic, savory depth that complements the steak.

1 teaspoon onion powder – Brings a subtle sweetness that balances the garlic.

1 teaspoon smoked paprika – For a touch of smoky flavor that takes these steak bites to the next level.

Salt and pepper – Always season generously to enhance the natural flavors of the steak.

Fresh parsley – Chopped, for garnish. It adds a pop of color and a fresh, herbal finish.

Optional Dipping Sauce:

  • 1/4 cup sour cream or Greek yogurt – A creamy base for your sauce.
  • 1 tablespoon Dijon mustard – Adds a bit of tang and sharpness.
  • 1 teaspoon honey – For a sweet contrast.
  • 1/2 teaspoon garlic powder – For an extra flavor boost.

Instructions

Step 1: Prepare the Steak

  • Start by patting the steak dry with paper towels. This helps achieve a nice sear. Cut the steak into bite-sized cubes, roughly 1 to 1.5 inches each. The uniform size ensures they cook evenly.

Step 2: Season the Steak

  • In a bowl, mix together the garlic powder, onion powder, smoked paprika, salt, and pepper. Sprinkle this seasoning blend evenly over the steak cubes. Don’t be afraid to be generous with the seasoning—it really brings out the flavor of the meat!

Step 3: Heat the Pan

  • Place a large skillet (preferably cast iron) over medium-high heat. Add the olive oil and let it heat up until shimmering, but not smoking. You want the oil hot enough to sear the steak, but not so hot that it burns.

Step 4: Sear the Steak Bites

  • Add the seasoned steak cubes to the pan in a single layer. Avoid overcrowding the pan, as this will prevent a good sear. Sear the steak bites for 2–3 minutes per side until they’re golden brown and crispy on the outside, but tender on the inside. Depending on your preferred level of doneness, you may want to cook them a little longer. For medium-rare, aim for an internal temperature of about 130°F.

Step 5: Rest the Steak Bites

  • Once the steak bites are cooked to your liking, remove them from the pan and let them rest for a few minutes. This allows the juices to redistribute, ensuring each bite is juicy and flavorful.

Step 6: Garnish and Serve

  • Toss the steak bites with fresh parsley for a burst of color and freshness. If you made the optional dipping sauce, serve it alongside for an extra layer of creamy goodness.
